How We Plan an Event
Week 4: tasting and menu. Week 2: headcount, staff and vendor booking. Day before: shopping and prep. On the day: a kitchen team and a service captain who stays until the last plate.
Our crew of 40 handles events from 50 to 1,500 guests. We bring our own vessels, stoves and uniformed staff; live counters and tandoor stations need power and space — we check on a site visit.
